Check this out for a simplified description of England vs UK vs etc. Still not perfect (there are always little nitpicky things wrong with every diagram) but pretty damn good.

We often say “England” when “UK” would be more appropriate. Kind of like we say “America” to mean the USA, even though we are not the only country on these continents.
Jersey is a British Crown Dependency off the coast of Normandy, France.
